Cinnamon Rolls:
Ingredients:
3/4 cup soy milk
2 tsp. yeast
1 1/2 cups all-purpose flour, plus more for dusting
1/2 cup whole-wheat flour
1/4 cup sugar
1 Tbs. baking powder
2 tsp. ground cinnamon, divided
1/4 tsp. salt
4 Tbs vegan margarine
1/3 cup brown sugar
Glaze:
1 1/2 cups confectioners' sugar
3 Tbs soy milk
Directions:
1. To make Cinnamon Rolls: Preheat oven to 425F. Line baking sheet with parchment paper. Heat milk in saucepan over medium heat, sprinkle with yeast. Set aside.
2. Combine flours, sugar, baking powder, 1/2 tsp. cinnamon and salt in bowl. Rub butter into flour mixture with fingers until mixture resembles coarse meal. Stir in milk until soft dough forms.
Transfer to well-floured surface and dust with flour. Press into 12x6-inch rectangle.
3. Combine brown sugar and remaining cinnamon in small bowl. Sprinkle over dough, and press in lightly with palms of hands. Gently roll dough lengthwise into log. Cut log into 16 3/4-inch-thick slices. Place slices on prepared baking sheet, reshaping into rounds if necessary. Bake 15-18 minutes, or until rolls begin to brown.
4. To make Glaze: Whisk together confectioners' sugar and soy milk. Glaze will be very thick. Bush glaze on cinnamon rolls right out of the oven.

Mchicha - Tanzanian Spinach & Peanut Curry
Mchicha is a very traditional dish in Tanzania & can be made like this with peanut butter - homemade or natural is best - or it can be made with a whole coconut (grated flesh & milk) instead.
SERVES 4 -6
* 2 lbs spinach
* 1 1/2 ounces peanut butter
* 1 tomato
* 1 onion
* 2 teaspoons curry powder (or paste, your favourite blend!)
* 1 cup coconut milk
* 3 tablespoons margarina or oil
* 1 teaspoon salt
Wash the spinach & roughly chop. De-skin the tomato, peel and chop. Peel and chop the onion.
Mix the peanut butter with the coconut milk in a jug & set aside.
Heat the margarine or oil over a medium heat in a large frying pan. Add the onion, tomato, salt and curry powder / paste and sauté for 5 minutes, or until the onion becomes soft.
Add the spinach, continue cooking for about 15 to 20 minutes, until the spinach is cooked.
Pour the peanut butter and coconut milk mixture into the pan & stir gently to mix.
Simmer, for another 5 minutes, stirring constantly, to ensure that the mixture does not stick to the pot.
This dish makes a lovely side dish, & can also be eaten with rice, ugali or samp and beans to form a delicious main course.

Congo Bars - Congo Squares

Congo Bars or Congo Squares are a popular dessert in the southeastern United States. They are also known as Blond Brownies, or Blondies (as they are made without any cocoa powder). They don't have anything to do with Africa -- the Congo region has no tradition of baked desserts such as brownies and cakes, and wheat (for flour) cannot be grown in Central Africa. In fact, most of Africa has little tradition of sweet desserts.
The name Congo Bars is a fanciful allusion to a mythical Congo, which also inspired the famous Congo Room of Las Vegas, and even the Congo Room of Canton, Ohio. Perhaps someone thought that all of the exotic ingredients (the chocolate, the coconut) might come from Africa. In New Orleans, there is a plaza called "Congo Square" (also known as Beauregard Square and now part of Louis Armstrong Park) which, in the early 19th century, was a gathering place for both free and enslaved African-Americans who met for marketing, music-making, and dancing -- and eating this variety of brownie? Who knows?

What you need
- two cups flaked coconut
- one-half teaspoon salt (omit if using salted butter)
- one teaspoon baking powder
- two cups all-purpose flour
- one cup unsalted butter, softened at room temperature
- one & one-half cups light brown sugar, firmly packed
- two eggs, lightly beaten
- two teaspoons vanilla
- one & one-half cups semi-sweet chocolate chips
What you do
- All ingredients should be allowed to come to room temperature if they have been in the refrigerator. Preheat oven to 350° F.
- Mix (or sift) together the salt, baking powder, and flour.
- When oven is hot, place the coconut on a cookie sheet and toast until lightly browned (one or two minutes). Remove and let cool.
- Using an electric mixer, mix together the butter and brown sugar. Add the beaten egg bit by bit, mixing well. Add vanilla. Stir in the flour mixture. Mix well with wooden spoon.
- Gently stir in the chocolate chips and the toasted coconut.
- Lightly grease (or butter) and flour a 9- x 13-inch cake pan. Spread the batter into the pan. Bake at 350° F for about 25 minutes. Remove from oven as soon as a sharp knife inserted into the center pulls away clean. Careful not to over-bake. Cool, cut into bars (or squares) and serve.
The coconut can be replaced, in whole or part, with your favorite chopped nuts (almonds, pecans, walnuts . . . ).

Callaloo a la Ilka

Ingredients:
-onion
-butter
-coconut milk
3 stalks of chive
3 cloves of garlic
-worcestershire sauce
-salt, pepper to taste
-chicken bouillon cube
-tabasco sauce or float a red
-hot chili pepper on top of callaloo
1 bundle callaloo bush (dasheen bush)
or substitute with spinach
10 ochroes or substitute
-with canned ochroes
Directions:
First clean callaloo bush or spinach. Remove
skin from the callalo stalks along with ribs
from leaves.
Next clean then cut ochroes, add to callaloo
bush. Cut the onion, garlic and chive and add
Now add the butter and melt in a large heated
pot. now add the callaloo mixture.
Keep on turning the leaves until they change
colour add pepper & salt with a few drops of
worcestershire, tabasco or you may use a hot
pepper to float over the top of the callaloo.
Make sure the hot pepper doesn’t burst during
cooking, or callaloo will be too hot. Add the
crumbled chicken bouillon cube and stir.
Add the coconut milk, cook the callaloo until
the seeds of the ochroes have turned slightly
pink.
You may swivel by hand using a swivel stick or
place it right into a blender and blend for at
least 3 separate seconds.
Note: you can make this recipe dry and use it
as a side dish or add some more water and make
it into a soup.

Ms Norma Coconut Bread

Ingredients
½ cup butter
½ tsp sugar
1 tsp salt
½ cup milk
1 tbsp Baking powder
1 tsp vanilla
2½ cup grated Jamaican coconut
3 cups all purpose flour
Preparation
Sift baking powder, flour and salt. And stir in coconut. Then mix egg, milk, vanilla and
butter together. Make a well in the dry ingredients. Pour liquid into the well. Stir lightly
but thoroughly and pour into 2 greased 8 or 9 inch loaf pans
, filling pans about
2/3 full. Sprinkle the top of the batter with sugar. Bake at 350 F for about 55 minutes or
until they are done.
Jamaican Stir-Fried Okra Recipe

INGREDIENTS
2 cups fresh Jamaican okra sliced
1 large Jamaican tomato, peeled and sliced
¼ cup Jamaican onions, sliced
1½ tsp. fresh Jamaican lemon juice
¼ tsp. Jamaican thyme, crushed
1 tsp. salt
A dash pepper
1 tbsp. vegetable oil
2 tbsp. butter
PREPARATION
1. Prepare all vegetables as indicated and have ready for cooking.
2. In a small bowl, combine lemon juice, thyme, salt, and pepper.
3. Heat oil and butter in a wok or large skillet. Add vegetables and seasoning mixture all at once.
4. Toss and cook for 5 to 8 minutes.

Radish greens sauce
3 bunches coarsely chopped radish greens (or other if not available)
4 tbsp tomato puree (or other sub), or cider vinegar
2 tsp. thyme
1 cup water
2 tbsp. veg oil
1 tsp. smooth peanut butter
1/4 onion thinly diced
1 clove garlic, diced
1 tsp. black pepper
dash of crushed habanero
1/4 chopped/crushed red pepper with seeds
1/4 tsp. crushed cardamom
1/4 tsp. allspice
Mix all ingredient together and heat low until greens collapse. Add water if needed (but careful not too much!). Allow to cool after thouroughly heated w/greens readily collapsed, then bottle and refridgerate. Pour over rice, greens, or anything the I desire.

Ital maffé

This sauce is inspired from a senegalese dish.
Cut 1 1/2 big onion and heat in vegetal oil until it become transparent and lightly brown, but not burned.
Add one squashed clove garlic, 3 teaspoon of peanut butter, 3 teaspoon of tomato pur�e and some water to diluate. add pepper, a very little paprika. Add done sweet potato, carots, turnip, yam...
Serve with rice.
You can also add fried tofu in the sauce.

Cornbread Muffins

Ingredients
1/2 cup butter, softened 2/3 cup white sugar 1/4 cup honey 2 eggs 1/2 teaspoon salt 1 1/2 cups all-purpose flour 3/4 cup cornmeal 1/2 teaspoon baking powder 1/2 cup milk 3/4 (10 ounce) package frozen corn kernels, thawed
Preheat oven to 400 degrees F (200 degrees C). Grease or line 12 muffin cups. In a large bowl, cream together butter, sugar, honey, eggs and salt. Mix in flour, cornmeal and baking powder; blend throughly. Stir in milk and corn. Pour or spoon batter into prepared muffin cups. I like to spread honey mixed with a little softened butter over the tops while they are still warm. You can use this same recipe for cornbread
Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of a muffin comes out clean.

Easy Chicken Pie

Ingredients:
4 large, boneless chicken breasts, cooked
1 can of cream of chicken soup
1 can of chicken broth
1 cup of self-rising flour
1 cup of milk
1 stick of butter, melted
Cut the cooked chicken into small pieces. Put chicken into a shallow casserole
dish and add the cream of chicken soup and chicken broth. In a separate bowl
mix the flour, milk, and the margarine. Pour mixture evenly over chicken and bake
at 375 degrees for 1 hour. Add any vegetables you like to the pie, if you like.

Charleston Traditional Creamy She-Crab soup

Ingredients:
1 tablespoon butter
1 teaspoon all-purpose flour
1 quart milk
1/8 teaspoon ground mace
1/8 teaspoon ground black pepper
1/2 teaspoon Worcestershire sauce
1 teaspoon salt
2 cups white crab meat (try to find fresh crabs with roe, but canned will do)
6 tablespoons dry sherry
1/2 cup whipping cream, whipped
1 tablespoon chopped fresh parsley
Directions:
Fill the bottom of a double boiler halfway with water. Bring to a low boil. Melt butter in top of double boiler, add flour and stir until smooth.
Gradually add milk, stirring constantly until smooth. Add mace, black pepper, Worcestershire sauce, salt, and crab meat, add roe . Cook over simmering water for 20 minutes.To serve, place 1 tablespoon of warmed sherry in each of 4 or 6 soup bowls (depends on how much soup you want). Ladle soup into bowls, top with a dollop of whipped cream, and sprinkle with fresh snipped parsley.

Grilled Flounder

2 pounds flounder or sole fillets
2 tablespoons lemon juice
1/2 cup grated Parmesan cheese
1/4 cup butter or margarine, melted
3 tablespoons mayonnaise
3 tablespoons chopped green onions
1/4 teaspoon salt
Directions:
1. Coat a piece of heavy-duty foil (about 14 in. x 14 in.) with nonstick cooking spray. Place fillets on foil; brush with lemon juice. Crimp foil, forming edges. Place foil flat on the grill (do not seal). Grill, covered, over medium-hot heat for 4 minutes. Combine Parmesan cheese, butter, mayonnaise, onions and salt; brush over fillets. Grill 3-4 minutes longer or until fish flakes easily with a fork.

Blackened Red Snapper
This blackened red snapper is cooked with a coating of spicy homemade blackened seasoning and served with a flavorful Creole sauce. Serve this with or without the Creole sauce, or use your own sauce.
INGREDIENTS:
* 4 red snapper fillets, about 6 to 8 ounces each
* 3 to 4 tablespoons melted butter
* .
* Blackened Seasoning
* 1 heaping tablespoon paprika
* 2 teaspoons salt
* 1 heaping teaspoon garlic powder
* 1 heaping teaspoon onion powder
* 1/4 to 1/2 teaspoon ground cayenne pepper
* 2 teaspoons black pepper
* 1/2 teaspoon leaf thyme
* 1/2 teaspoon leaf oregano
PREPARATION:
Creole Sauce
Mix the blackened seasoning ingredients well and funnel into a shaker.
Heat a large skillet over medium heat. Brush red snapper fillets all over with butter; sprinkle with blackened seasoning. Place, skin side down, in hot skillet; drizzle a little more butter over each fillet. Cook for about 4 minutes, until blackened; turn fillets carefully and drizzle with another small amount of butter. Cook for another 2 to 3 minutes. Serve with Creole sauce (see link above) or as is, with rice and a green vegetable.

Pecan Pie

Ingredients
2 eggs, slightly beaten
1 cup light corn syrup
1/4 cup brown sugar
1 Tbsp molasses
2 Tbsp melted butter
2 Tbsp flour
1/4 teaspoon salt
1 teaspoon vanilla
1 1/4 cups pecans, coarsely chopped
1 9-inch pie shell, chilled for an hour if freshly made, defrosted for 10 minutes if frozen. (See pie crust recipes.)
Method
1 Preheat oven to 375°F. Spread pecans along the bottom of the pie shell. Mix the remaining ingredients and pour over pecans. The pecans will rise to the surface of the pie.
2 Bake at 375°F for 45-50 minutes until the filling has set. About 20 minutes into the cooking you may want to use a pie crust protector, or tent the edges of the pie crust with aluminum foil to prevent the pie crust edges from burning.
3 Remove from oven and let cool completely.
Serves 8.

Ingredients
Dough:
* 1/4-ounce package yeast
* 1/2 cup warm water
* 1/2 cup scalded milk
* 1/4 cup sugar
* 1/3 cup butter or shortening
* 1 teaspoon salt
* 1 egg
* 3 1/2 to 4 cups all-purpose flour
Filling:
* 1/2 cup melted butter, plus more for pan
* 3/4 cup sugar, plus more for pan
* 2 tablespoons ground cinnamon
* 3/4 cup raisins, walnuts, or pecans, optional
Glaze:
* 4 tablespoons butter
* 2 cups powdered sugar
* 1 teaspoon vanilla extract
* 3 to 6 tablespoons hot water
Directions
Heat oven to 350 degrees F.
In a small bowl, dissolve yeast in warm water and set aside. In a large bowl mix milk, sugar, melted butter, salt and egg. Add 2 cups of flour and mix until smooth. Add yeast mixture. Mix in remaining flour until dough is easy to handle. Knead dough on lightly floured surface for 5 to 10 minutes. Place in well-greased bowl, cover and let rise until doubled in size, usually 1 to 1 1/2 hours.
When doubled in size, punch down dough. Roll out on a floured surface into a 15 by 9-inch rectangle. Spread melted butter all over dough. Mix sugar and cinnamon and sprinkle over buttered dough. Sprinkle with walnuts, pecans, or raisins if desired. Beginning at the 15-inch side, role up dough and pinch edge together to seal. Cut into 12 to 15 slices.
Coat the bottom of baking pan with butter and sprinkle with sugar. Place cinnamon roll slices close together in the pan and let rise until dough is doubled, about 45 minutes. Bake for about 30 minutes or until nicely browned.
Meanwhile, mix butter, powdered sugar, and vanilla. Add hot water 1 tablespoon at a time until the glaze reaches desired consistency. Spread over slightly cooled rolls.

Pumpkin Pie

Ingredients
* 1 (8-ounce) package cream cheese, softened
* 2 cups canned pumpkin, mashed
* 1 cup sugar
* 1/4 teaspoon salt
* 1 egg plus 2 egg yolks, slightly beaten
* 1 cup half-and-half
* 1/4 cup (1/2 stick) melted butter
* 1 teaspoon vanilla extract
* 1/2 teaspoon ground cinnamon
* 1/4 teaspoon ground ginger, optional
* 1 piece pre-made pie dough
* Whipped cream, for topping
Directions
Preheat the oven to 350 degrees F.
Place 1 piece of pre-made pie dough down into a (9-inch) pie pan and press down along the bottom and all sides. Pinch and crimp the edges together to make a pretty pattern. Put the pie shell back into the freezer for 1 hour to firm up. Fit a piece of aluminum foil to cover the inside of the shell completely. Fill the shell up to the edges with pie weights or dried beans (about 2 pounds) and place it in the oven. Bake for 10 minutes, remove the foil and pie weights and bake for another 10 minutes or until the crust is dried out and beginning to color.
For the filling, in a large mixing bowl, beat the cream cheese with a hand mixer. Add the pumpkin and beat until combined. Add the sugar and salt, and beat until combined. Add the eggs mixed with the yolks, half-and-half, and melted butter, and beat until combined. Finally, add the vanilla, cinnamon, and ginger, if using, and beat until incorporated.
Pour the filling into the warm prepared pie crust and bake for 50 minutes, or until the center is set. Place the pie on a wire rack and cool to room temperature. Cut into slices and top each piece with a generous amount of whipped cream.

Sweet Potato Pie Recipe

4 large potatoes
2 cups sugar
1 stick butter
1 pinch cinnamon
1 pinch nutmeg
1 store-bought pie crust
or your can just line a pan with vanilla wafers
instead
1/2 cup milk
Boil the potatoes until tender. When you stick a
fork in them it should go in easy but you don't
want them to fall apart.
Let the potatoes cool and then peel them.
Put the potatoes in a large mixing bowl and
mash them thoroughly with a potatoe masher.
Melt the butter and pour it and the other
ingredients in the bowl of potatoes. Stir
until well mixed.
Whether you used a ready made pie crust or
just cookies, pour the potatoes mixture
into the crust.
Put into an oven preheated to 375 degrees.
Cook for about 35-40 minutes or until a toothpick
inserted in the center comes out dry.
If you want you can make a meringue topping by
blending confectionary sugar with egg whites.
After the pie is almost done, spread the
meringue thinly across the top. Continue baking
until the meringue turns light brown. If you
use the meiangue, you can add the egg yokes
to the pie if you like. I prefer my pie
without eggs, so I just save the yokes for breakfast

Home Fried Sweet Potatoes

Easy home fried sweet potatoes are made with cooked sliced sweet potatoes and a little sugar and butter. A great dish to use extra cooked sweet potatoes.
INGREDIENTS:
* 4 medium sweet potatoes
* 2 tablespoons vegetable oil
* 2 tablespoons butter
* 2 tablespoons sugar
* dash cinnamon, optional
PREPARATION:
Boil sweet potatoes in skins until tender; slice about 1/4-inch thick. Heat oil and 2 tablespoons butter over medium heat and brown sliced sweet potatoes quickly. Sprinkle with sugar, along with cinnamon, to taste.
Serves 4.

Grilled Scallops

"This is my Mom's easy recipe for grilled scallops. It is simple, quick, and delicious. The only tools you need are a grill and a grilling basket."
Ingredients:
3/4 cup butter
2/3 cup chopped onions
3 cloves garlic, chopped
1/4 cup fresh lemon juice
1 pinch salt
1 1/2 pounds sea scallops
1/3 cup chopped fresh parsley
Directions:
1. Preheat an outdoor grill for medium heat and lightly oil grate.
2. Melt butter in a saucepan over medium heat. Cook onion and garlic until soft and translucent, about 5 minutes. Remove from heat, and stir in lemon juice and salt. Place scallops in a large bowl, and toss with butter mixture. Let stand for about 2 minutes.
3. Thread scallops onto skewers, or use a wire grill basket. Cook on preheated grill for about 4 minutes per side.
4. Return butter mixture to saucepan, and bring to a boil. Reduce heat to low, and keep warm while scallops cook. Toss with grilled scallops and serve.

Okra With Shrimp

Ingredients:
* 1 pound okra, trimmed, washed, sliced
* 3 tablespoons olive oil
* 3 tablespoons butter
* 1 medium onion, coarsely chopped
* 1 green bell pepper; seeded and coarsely chopped
* 4 large tomatoes; peeled, seeded and chopped
* 1/2 cup dry white wine
* 2 tablespoons lemon juice
* 1 tablespoon fresh parsley, chopped
* salt
* black pepper
* 1 to 1 1/2 pounds shrimp; peeled and deveined
* hot cooked rice
Preparation:
Heat the oil and butter in a large skillet until the butter is melted. Add the onion and bell pepper; toss to coat evenly. Stir in the okra and cook over medium heat until the onion is translucent.
Add the tomatoes, wine, lemon juice, parsley, salt, and pepper. Simmer, stirring occasionally, until the tomatoes soften. Add the shrimp and continue cooking for 3 to 4 minutes, or until the shrimp turns pink and opaque.
Serve with hot cooked rice.
Serves 4.
