Spicy Potato Skins Recipe



This potato skins recipe is spicy and tasty. The recipe for potato skins includes a mixture of spices and the guacamole goes perfectly with them. This potato skins appetizer can also be served as an accompaniment to a main meal.

There are various loaded potato skins recipes to choose from but if you like spicy food, you should give this one a go! You can use the leftover potato (which is scooped out) to make mashed potatoes or bubble and squeak recipes.

South of the Border Potato Skins Served Appetizer with a Guacamole Dip

Ingredients -

6 scrubbed large potatoes
3 tablespoons sunflower oil
1 teaspoon chili powder
1 teaspoon garlic salt
1 teaspoon ground cumin
1 teaspoon allspice
Freshly ground black pepper
1 cup guacamole

Preparation:

Preheat the oven to 350 degrees F.

Prick the potatoes all over with a fork and bake them for an hour. Alternatively, microwave them all together for 25 minutes. Heat the grill to medium hot.

Cut the potatoes in half and scoop out all but ¼ inch potato wall. Cut each half into three wedges. Brush the potato wedges with oil. Combine the seasonings and sprinkle them over the potato skins.

Place the potato wedges on a sheet of foil and grill them for 10 minutes, turning occasionally, until golden and crisp.

Serve hot with the guacamole.

Ceylon Vegetable Curry



Keeps well a couple of days in the fridge, and freezes well too. Great with rice or green salad.

THE SPICES MIXTURE

* 30 g. vegan margarine
* 1 tablespoon oil
* 3 large onions, finely chopped
* Garlic and ginger, finely chopped (lots of both!)

Tandoori Spice:

* 3 - 4 tablespoons of Tandoori Paste (e.g. Patak’s), OR
* 4 - 5 tablespoons of Tandoori Spice Mix (e.g. Clive of India)
* 1 cup of water

2) THE VEGETABLES

* Cubed: potatoes, carrots, pumpkins, green beans, peas, red capsicum strips

3) THE SAUCE

* 300g (1/2 bottle) of tomato salsa / puree e.g. La Gina
* OR
* 2 large tomatoes, chopped
* OR
* 1 tin tomatoes, pureed
* White Vinegar, ¼ to ½ a cup
* Marmelade or apricot jam, ½ to 1 cup (whatever you like the taste of)
* Some Chilli powder / paste, if you like it (I DON'T USE IT)
* 1-2 cups of coconut milk.

4) THE GARNISH

* Pineapple pieces banana chunks shaved coconut chutney pappadums sultanas plain yoghurt cucumber slices and / or tomato wedges

1) THE SPICES MIXTURE
Fry it all together over MEDIUM HEAT, until all the WATER IS GONE, and the mixture is SOFT and starting to turn DARK REDDISH BROWN, and stick to the pan.

2) THE VEGETABLES
Now add the cubed vegetables (** they could be pre-microwaved or steamed) to the spices, and brown gently. Cubed: potatoes, carrots, pumpkins, green beans, peas, red capsicum strips

3) THE SAUCE
Next add the sauce ingredients to the vegetables and spices in the pan. Leave to simmer VERY VERY SLOWLY on LOW HEAT, until it is no longer runny. Just before the end, add the coconut milk. If the mixture becomes too runny, keep cooking it until it thickens.

4) THE GARNISH
Serve with an assortment of bowls on the table.

Grilled BBQ Potato Chips




Ingredients:
2 Idaho Baking Potatoes
1/4 cup olive oil

Directions:
Peel the 2 baking potatoes. Cut the potatoes lengthwise into paper
thin slices. Put the potato slices in hot salted water, stirring to
separate the slices. Allow the potato slices to stand in the water
until pliable (about 4 minutes).

Roll each potato slice and run a skewer through the middle of the
rolled slice. Allow about 1/2 inch space between each slice placed
on the skewer. Carefully brush each rolled potato slice with olive oil.
Place the skewers on a skewer rack over hot coals. Turning
frequently, cook 10 to 15 minutes, or until potatoes are crisp.
Drain excess oil by placing potatoes on a paper towel.

Arrange the chips on a serving plate surrounding a bowl of your
favorite Rasta Joe's BBQ Sauce and start dipping!! Serves 8 to 10

Ital omelette




Ingredients:
1/4 cup chickpea flour
3/4 cup water
salt to taste
pepper to taste
1 onion
1 or 2 potatoes (depends how hungry you are)
1 broccoli stalk (or other vegetable; You can experiment)
1 tsp olive oil

Directions:
This recipe sounds kind of gross, but you have to make it to appreciate how wonderful it is.
Make a mixture with water and chickpea flour in such a proportion to get an 'egg-like' batter. Start with 1/2 cup of water, add the chickpea flour, stirring constantly, and progressively increase the amount of water and chickpea flour until you get about 1 cup of batter. The amounts I have indicated above are approximate. Season it with salt and pepper. Boil the potatos 'al-dente', then slice.
In a pan, stir-fry the onion (sliced) in 1 TSP. of olive oil. Add the sliced potatos and stir until golden. Add the broccoli florets and pour the batter along the vegetables. Put a lid on top and simmer until the bottom is golden, then turn (a plate can help - if the pan is non-stick it will make the turn a lot easier) and cook the other side.

Serve hot or cold.

Hot Potato Chips with Blue Cheese Sauce

Ingredients
Blue Cheese Sauce:

* 2 1/4 cups whole milk
* 2 tablespoons unsalted butter
* 1 small Spanish onion, finely chopped
* 2 tablespoons all-purpose flour
* 1/4 teaspoon kosher salt
* Pinch cayenne pepper
* 1/2 pound crumbled blue cheese
* Homemade Potato Chips, recipe follows, or good-quality store-bought potato chips

Directions

Place the milk in a small saucepan and bring to a simmer over low heat. Heat the butter in a medium saucepan over medium heat. Add the onion and cook until soft. Stir in the flour and cook for 1 minute. Slowly whisk in the warm milk, and continue whisking until thickened. Season with salt and cayenne pepper. Continue cooking for 5 minutes, whisking occasionally. Remove from the heat and stir in the cheese. If the sauce is too thick, thin it with a little extra milk. Serve sauce warm with potato chips for dipping.
Homemade Potato Chips:

* 6 large Idaho potatoes, peeled and sliced lengthwise into 1/8-inch thick slices on a mandoline
* 2 quarts peanut oil
* Salt

Place the potato slices on a baking sheet between layers of paper towels to make sure they are very dry before frying.

Heat oil in a large, heavy saucepan until the temperature of the oil reaches 400 degrees F on a deep-fat thermometer. Fry the potatoes in small batches until golden brown on both sides, turning once. Remove with a slotted spoon and place on a brown paper bag or another baking sheet lined with paper towels to drain. Season with salt immediately. Serve hot with the blue cheese dipping sauce.

Skillet Home Fries

Ingredients

* 3 tablespoons vegetable oil
* 1 large onion, finely sliced
* 1 large poblano pepper, finely diced
* 1 large red pepper, finely diced
* 2 cloves garlic, coarsely chopped
* 1 tablespoon paprika
* Salt and freshly ground pepper
* 4 red potatoes, cut into 1/2-inch cubes

Directions

Heat oil in a cast iron skillet over medium heat. Add onion and saute until soft. Add poblano, red pepper and garlic and cook for 1 minute. Add paprika and cook for 1 minute. Add potatoes and season with salt and pepper to taste. Cover and cook until almost cooked through. Remove cover and continue cooking for 5 to 10 minutes until golden brown.

Vegetable Soup




Ingredients:

* Fat-free cooking spray
* 1 small onion, grated or diced
* 1 cup celery, chopped into bite-sized pieces
* 6 cups (48 oz) fat-free vegetable broth
* 1 lb red potatoes, peeled and diced (Equals about 3 medium potatoes or about 3 cups diced potatoes)
* 1 cup carrots, chopped into bite-sized pieces
* 1 cup green beans (fresh, frozen, or canned is fine)
* 1 cup corn (fresh, frozen, or canned is fine)
* 1 (8.5-oz) can peas (or use 1 cup fresh or frozen)
* 3 (5.5 oz) cans low-sodium V8 juice (about 2 cups) -or- 1 can diced tomatoes (not drained)
* 1-2 level tsp of "Bells Seasoning" or to taste (This is found in a small box in the spice aisle. If you can't find it, you can substitute with a blend of rosemary, oregano, sage, ginger, marjoram, thyme, and black pepper)
* Salt and pepper, or to taste
* Bay leaf (optional)

Directions:

Spray large soup kettle with cooking spray. Saute onion and celery for 5 minutes. Add vegetable broth, potatoes, and carrots; bring to a boil. Lower heat; Add green beans, corn, peas, V8 and bay leaf; Simmer for 40 minutes or until vegetables are nice and soft. Season with Bells Seasoning, salt, and pepper to taste.

*Remove bay leaf*

Serve hot.

Yields: Approx 8 (1-cup) servings (1.25 points per serving)

Southern Potato Salad




Recipe Ingredients:

1 – pound red potato
1 – hard boiled egg, finely chopped
1 – large celery rib, finely chopped
1/2 – cup mayonnaise or Miracle Whip
1/2 small onion, finely chopped
1/8 – teaspoon yellow mustard

Cookware and Utensils:

1 – Large Boiling Pot
1 - Small Boiling Pot
1 – Large Serving Bowl With Lid
1 - Stirring spoon
1 – Knife

Recipe Instructions:

As always, the key to great cooking is to be prepared and to use quality ingredients.

Start of by rinsing potatoes thoroughly under running water. While rinsing, gently scrub potatoes to remove dirt.

Place potatoes into a large pot and cover with at least two inches of cold water. Bring water to rolling boil and cook potatoes until tender. Don’t allow the water to boil out. Once potatoes are done remove from heat, pour out water and allow to cool before peeling. Go ahead and clean your large pot because you will use it later to mix up your potato salad.

Place eggs into a small pot, add cold water and bring to boil over medium-high heat. Cook eggs until done. Remove eggs from heat, add cold water and allow to cool before chopping.

Now that the potatoes have cooled, peel them and mash them up one at a time into your large pot. Add celery, eggs, onion, mayonnaise and mustard. Mix all of the ingredients together thoroughly. Start with the exact measurements and adjust to your desired taste, if necessary. If you must go ahead and add salt and pepper to taste.

Spoon the combined mixture into a suitable size bowl with lid. Cover and refrigerate. Serve potato salad cold.

Crockpot Potato Soup Recipe




Top this potato soup with chopped chives or parsley, or top with bacon bits or grated cheese for a heartier soup.

Ingredients:

* 6 medium potatoes, peeled and diced
* 2 leeks, washed, sliced, including white and light green
* 1 cup chopped onion
* 1 carrot, scraped and diced
* 1 stalk celery, sliced
* 1 tablespoon dried parsley flakes
* 4 cups chicken broth
* 1 to 1 1/2 teaspoons salt, or to taste
* pepper
* 2 tablespoons butter
* 12 ounces evaporated milk (1 1/2 cups)
* chopped chives or parsley for garnish, optional

Preparation:
Put all ingredients except evaporated milk and chives in crockpot. Cook on low 7 to 9 hours or high 3 to 4 hours. Stir in milk the last 45 minutes.
Serve hot, topped with chives or parsley. For a heartier soup, top each serving with shredded cheese and cooked crumbled bacon.

Louisiana Crawfish Boil Recipe




Ingredients Needed:

1 (35 to 40 pound) sack live crawfish*
1 (26-ounce) box salt for purging
Water
2 (1 pound) boxes/sacks crawfish or crab or shrimp boil seasoning (see column on left)
6 to 8 lemons, sliced in half
Small onions, peeled
Smoked sausage, cut up into large pieces
Whole mushrooms
Small red or new potatoes, unpeeled
15 to 20 ears of fresh corn on the cob, shucked and broken in halves
6 heads of garlic, split in half exposing pods
Whole mushrooms

* Use over-night delivery for live crawfish. You should order the crawfish to arrive the day before or the day of your crawfish boil.


Equipment Needed:

One large boiling pot (60 to 80 gallon) with basket insert, and lid (you can use your deep-fat turkey fryer - will cook about 10-15 lbs of crawfish per batch)

Outdoor high-pressure propane cooker

Large tub or two ice chests (depending on the amount of live crawfish)

A large paddle for stirring the crawfish.

A large picnic table with plenty of newspapers to cover it, several rolls of paper towels, and a large garbage can.

How many pounds of live crawfish to order:

Plan on ordering about 2 to 3 pounds of crawfish per person or 4 to 5 pounds for a heavier crawfish eater. Some people are extra-heavy eaters. For them you will need 5 to 7 pounds.


Keeping Live Crawfish Techniques: Crawfish season is from late February to mid-May. You must keep the live Crawfish fresh and healthy. Keep them in a cool place and out of the heat. Your garage is the perfect spot until you're ready to boil.



When you receive your sacks of crawfish, simply take your sack of crawfish, hose them down, and place them back in a cooler (or the box the sacks arrived in) with a bag of ice. Do not take the crawfish out of the sack, leave them in the sack and hose the entire sack with fresh water.


If you use ice, be sure to drain them frequently. DO NOT let them sit in cold water for a long time or they will die! Keep live crawfish at 36 to 46 degrees F. for approximately 3 days with wet burlap sacks, towels, etc. on top. Let crawfish return to room temperature before using. Do not leave the crawfish outside if the temperature is freezing level or below!


When traveling with crawfish, a few of them will die naturally due to stress of being moved, etc.


Purging Crawfish:



The cardinal rule is to purge and thoroughly wash the crawfish before boiling them. Pour the sack of live crawfish in a plastic children's pool, large tub, or a large ice chest. Pour one (1) 26-ounce box salt over the top of the crawfish. Add water to just cover the crawfish. Gently stir with a large paddle to mix the salt and the water. Stir for 3 minutes, then rinse crawfish. NOTE: some people skip adding salt.



e careful not to let them purge too long. You do not want them to be dead when you add them to the boil. Throw away all crawfish that have already died (the dead crawfish should float to the top). You do not, I repeat, DO NOT want to add dead crawfish to the pot.


After purging and cleaning, don’t leave the crawfish covered with water, as they need air to stay alive. Keep the crawfish in a cool or shaded area until you’re ready to start cooking.


Boiling Crawfish: If you have not already done so, drink a cold beer.



In a large (60- to 80-gallon) pot over high heat, add enough water to fill a little more than halfway.


Squeeze out the juice out of the lemon halves into the water and throw the lemon halves into the water.


Add crawfish or crab boil seasoning (see left column).


Large pot of fresh boiled crawfishCover pot, turn on the burner full blast, and bring water to a boil; boil 2 to 3 minutes to allow the spices to mix well. NOTE: It needs to be hot enough to bring the pot to a rolling boil in about 15 minutes.

Using a large wire basket that fits into the pot, add onions, sausage, mushrooms, and potatoes. Maintain a boil and cook 10 minutes or until potatoes are tender.

Add crawfish to the wire basket, stirring them a bit. Once the water starts a rolling boil again, boil 5 minutes. Regulate the burner so the rolling boil is maintained, but where the pot does not boil over.

Turn the burner off, keep the pot covered, and let the crawfish soak for 20 to 30 minutes. Remove wire basket from pot.

Remove the strainer from the water, and rest it on the top of the pot using two boards laid on the top of the pot as a rack. Let the crawfish drain.


Serving Boiled Crawfish: To serve the traditional way, cover a table (preferably outdoors) with thick layers of newspaper.

Spill the contents of the basket (onions, potatoes, sausage, mushrooms, and crawfish) along the length of the newspaper-covered table. They are best served steaming hot.

Makes 10 servings.
