Ms Norma Coconut Bread



Ingredients
½ cup butter
½ tsp sugar
1 tsp salt
½ cup milk
1 tbsp Baking powder
1 tsp vanilla
2½ cup grated Jamaican coconut
3 cups all purpose flour

Preparation
Sift baking powder, flour and salt. And stir in coconut. Then mix egg, milk, vanilla and
butter together. Make a well in the dry ingredients. Pour liquid into the well. Stir lightly
but thoroughly and pour into 2 greased 8 or 9 inch loaf pans
, filling pans about
2/3 full. Sprinkle the top of the batter with sugar. Bake at 350 F for about 55 minutes or
until they are done.

Cornbread Casserole




Ingredients:

1 pkg. (8 ounces) of cornbread stuffing mix
2 cups of frozen mixed vegetables slightly thawed
1-1/2 cups of cubed cooked ham
3 eggs, lightly beaten
2 cups of milk
1/4 teaspoons salt
1/4 teaspoon of black pepper
1/2 cup of shredded cheddar cheese

In a microwavable baking dish (12×8x2-inch) mix together the stuffing, vegetables and ham. In a bowl mix together the eggs; milk, salt, and pepper pour this over the cornbread mixture and cover with plastic wrap. Put in the refrigerator and leave for at least 5 hours or overnight.

Next day, remove the plastic wrap and cover with waxed paper and microwave for 6 minutes rotate 1/4 turn. Continue microwaving for another 7 to 9 minutes or until a knife inserted in middle comes
out clean. Sprinkle with the cheese.

Fried Summer Squash Recipe

Ingredients:

  • 4 eggs, beaten
  • 3/4 cup milk
  • 1 1/4 teaspoons salt
  • 7 medium summer squash, thinly sliced
  • 2 1/2 cups flour
  • oil

Preparation:

Combine eggs, milk, and salt. Dip squash in the egg batter, then roll in flour until well coated. Fry in deep hot fat, about 360°, until golden brown.
