Fabulous Homemade Bread


Ingredients:

1/2 cup warm water
3 (.25 ounce) packages active dry yeast
1/4 cup bread flour
1 tablespoon white sugar
2 cups quick cooking oats
2 cups whole wheat flour

4 1/2 cups warm water
1 1/2 tablespoons salt
2/3 cup brown sugar
2/3 cup vegetable oil
10 cups bread flour

Directions:

1.In the mixing bowl of an electric mixer, stir together 1/2 cup warm water, 1 tablespoon sugar, 1/4 cup bread flour, and yeast. Let grow for about 5 minutes. It will bubble almost immediately.

2.Measure oats, 4 1/2 cups warm water, whole wheat flour, salt, 2/3 cup sugar, and 2/3 cup oil into the mixing bowl. Mix on low speed with a dough hook for 1 to 2 minutes. Increase speed slightly, and begin adding bread flour 1/2 to 1 cup at a time until dough pulls away from sides of bowl. Humidity determines how much flour you need before the bread pulls away from the edge of the bowl. It is normal for the dough to be sticky.

3.Place dough in an oiled bowl, and turn to coat the surface. Cover with a damp cloth. Let rise in a warm spot for 1 hour, or until doubled in size.

4.Divide dough into 6 pieces. Shape loaves, and place in greased 8 x 4 inch pans. Let rise until dough is 1 inch above rim of pans, usually 1 hour.

5.Bake at 350 degrees F ( 175 degrees C) for 35 minutes, or until tops are browned. Let cool in pans for 10 minutes, and then turn out onto wire racks to cool completely.

Vegan Cornbread





1/4 cup plus 2 tablespoons canola oil
1 cup sifted flour
1 cup yellow cornmeal
4 teaspoons aluminum-free baking powder
1/2 teaspoon fine sea salt
3 tablespoons turbinado sugar, (Sugar in the Raw brand)
1/4 cup unsweetened applesauce
1 to 1 1/4 cup plain low-fat soy milk or rice milk

Preheat the oven to 425 degrees. Place the canola oil in a 10- or 12-inch cast-iron skillet and heat the skillet in the oven until the oil is hot (about 10 minutes). Remove from the oven and swirl around so that the oil coats the skillet bottom and sides; set aside. Or while the oil is heating, you can work really fast to mix the corn bread before the oil starts to smoke or gets too hot.

Combine the flour, cornmeal, baking powder, salt and sugar in a large measuring cup or bowl. In a separate large bowl, whisk together the applesauce and milk (if using rice milk, start with 1 cup). Use a fine-mesh strainer to sift the dry ingredients into the wet mix. Carefully add the heated oil from the skillet; the mixture will bubble a bit. Mix well.

Pour the warm batter into the hot, oiled skillet and bake for about 20 minutes, or until golden brown. Cut into wedges and serve warm. Makes 8 servings.

Ital bread



-in a dry pan put sesame seeds, cumin seeds, or the seed of your choice
(hemp, crushed peanuts...) and warm until light brown, so the seeds can
exhale their flavors. when done, reserve.

-Make then a paste using half corn flour and chickpea flour, salt, natural
yeast, water, pepper. you can also add herb such as thyme. add water in
order to have a classical bread paste. add the seeds.

-knead about 15/30 minutes and then leave 2 hours. Knead again and leave 2 hours again

-when ready, oil very lightly a big pan, warm it (my position is 3 on 6).
add the paste a make it plate. add a liitle flour and project a little water
with wet hands. cook aproximately 10 min per face, until brown

Mandarin Pancakes





3 1/2 flour
1 cup boiling water
1/3 cup cold water
1/2 cup sesame oil
Oil as needed for greasing

Preparation:

- Sift the flour into a large mixing bowl. make a well in the center and add the boiling water, a little at a time, incorporating the flour by stirring it into the water with a wooden spoon or chopsticks.
-Cover bowl and let sit for 5-minutes, then add the cold water, mixing well.
-Turn the flour mixture out and work with your fingers to blend until a dough is formed. Cover with a dampened towel and set aside for 15 minutes.
-Remove dough to a board and knead for 10 to 12 minutes or until smooth.
-Divide dough into 4-equal portions. Roll each part into a rod, then divide each dough rod into 10 equal pieces.
- Grease an area of the kneading board about 10 inches square with oil to prevent sticking. Flatten each piece of dough into a 2-inch round and brush evenly with sesame oil on the surface. Place another round on top, forming a 2-layered round. Roll into a thin pancake about 6 inches in diameter and 1/8 inch thick. Grease the board with more oil if needed.
-Roll 2 pancakes, then proceed with the cooking. Continue to roll and cook, 2 pancakes at a time, until all the dough is used up.
Cooking:
- Set a griddle (or heavy skillet) over medium heat. Pan-fry each pancake for 1 minute or unti lthe surface bubbles and brown spots appear on the bottom side. Turn to brown on other side for about another 30 seconds.
- Remove pancake and pull the 2 layers apart while hot. Stack pancakes on a platter and cover with a lightly dampened cloth.
-Finish pan-frying the remaining pancakes.

Cornbread Muffins




Ingredients
1/2 cup butter, softened 2/3 cup white sugar 1/4 cup honey 2 eggs 1/2 teaspoon salt 1 1/2 cups all-purpose flour 3/4 cup cornmeal 1/2 teaspoon baking powder 1/2 cup milk 3/4 (10 ounce) package frozen corn kernels, thawed

Preheat oven to 400 degrees F (200 degrees C). Grease or line 12 muffin cups. In a large bowl, cream together butter, sugar, honey, eggs and salt. Mix in flour, cornmeal and baking powder; blend throughly. Stir in milk and corn. Pour or spoon batter into prepared muffin cups. I like to spread honey mixed with a little softened butter over the tops while they are still warm. You can use this same recipe for cornbread

Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of a muffin comes out clean.

Carolina Country Hobo Bread




Ingredients:

1 1/2 cups of raisins
2 teaspoons of baking soda
1 cup of boiling water
1 cup of sugar
1/2 cup of chopped nuts
3 tablespoons of shortening
1 egg, beaten
2 cups of flour
1/8 teaspoon of salt

Pour the boiling water over the raisins and baking soda and let stand until cool. Combine the other ingredients with the raisin mixture and bake in a greased loaf pan at 350 degrees for 60 minutes or until done.

Fried Fish Sandwich

Ingredients

  • Grapeseed oil, for frying
  • 2 1/2 pounds fresh flounder fillets
  • 3 tablespoons seafood seasoning, plus more for sprinkling
  • 2 cups all-purpose flour
  • 2 cups panko bread crumbs
  • 3 eggs beaten
  • Remoulade sauce, recipe follows
  • 1 large French baguette, cut into 4 servings
  • 12 tomato slices
  • 8 romaine leaves, chiffonade
  • 1 small red onion, sliced thin

Directions

Preheat oil in saute pan.

Wash off fillets and pat dry with a towel. Lightly sprinkle with seafood seasoning on both sides.

In 3 separate bowls, place flour mixed with 3 tablespoons seafood seasoning. panko and 3 beaten eggs.

Dredge fillets into flour, egg and then panko. Add fish to oil and fry until golden brown, about 4 to 6 minutes. Remove to a paper towel lined platter.

Spread remoulade sauce on both sides of toasted bread with a rubber spatula. Layer some romaine on the bottom, then top with fish, sliced tomato, red onion and then finally, a little more romaine on top. Add top portion of bread to make a sandwich. Repeat with remaining sandwiches.

Remoulade Sauce:

Place all ingredients into a blend but the mayonnaise and pulse together for a minute. Pour into bowl and add mayonnaise. Mix together. Chill in refrigerator until ready to serve.

Fried Bologna Sandwich Recipe

* 2 slices white bread
* 1-2 slice bologna (depending on preference)
* 1/8 teaspoon oil
* 1 slice American cheese
* 1 tablespoon mustard

1. Put oil in a frying pan and heat to med. high.
2. Put slit in bologna from middle to all the way through the end.
3. Put bologna in heated oil.
4. Brown both sides.
5. Add cheese to top while last side is browning.
6. Spread mustard on both sides of bread.
7. Add bologna between slices and gobble it up!

Cinnamon Rolls

Ingredients
Dough:

* 1/4-ounce package yeast
* 1/2 cup warm water
* 1/2 cup scalded milk
* 1/4 cup sugar
* 1/3 cup butter or shortening
* 1 teaspoon salt
* 1 egg
* 3 1/2 to 4 cups all-purpose flour

Filling:

* 1/2 cup melted butter, plus more for pan
* 3/4 cup sugar, plus more for pan
* 2 tablespoons ground cinnamon
* 3/4 cup raisins, walnuts, or pecans, optional

Glaze:

* 4 tablespoons butter
* 2 cups powdered sugar
* 1 teaspoon vanilla extract
* 3 to 6 tablespoons hot water

Directions

Heat oven to 350 degrees F.

In a small bowl, dissolve yeast in warm water and set aside. In a large bowl mix milk, sugar, melted butter, salt and egg. Add 2 cups of flour and mix until smooth. Add yeast mixture. Mix in remaining flour until dough is easy to handle. Knead dough on lightly floured surface for 5 to 10 minutes. Place in well-greased bowl, cover and let rise until doubled in size, usually 1 to 1 1/2 hours.

When doubled in size, punch down dough. Roll out on a floured surface into a 15 by 9-inch rectangle. Spread melted butter all over dough. Mix sugar and cinnamon and sprinkle over buttered dough. Sprinkle with walnuts, pecans, or raisins if desired. Beginning at the 15-inch side, role up dough and pinch edge together to seal. Cut into 12 to 15 slices.

Coat the bottom of baking pan with butter and sprinkle with sugar. Place cinnamon roll slices close together in the pan and let rise until dough is doubled, about 45 minutes. Bake for about 30 minutes or until nicely browned.

Meanwhile, mix butter, powdered sugar, and vanilla. Add hot water 1 tablespoon at a time until the glaze reaches desired consistency. Spread over slightly cooled rolls.

Hushpuppy Recipe




4 cups vegetable oil
2 cups yellow cornmeal
1 cup all-purpose flour
1 egg, beaten
3/4 teaspoon salt
1/4 teaspoon baking soda
2 cups milk
1 cup water

In a cast-iron skillet or a large heavy fry pan over medium-high heat, heat vegetable oil to 350° F or until a small amount of batter dropped into the hot oil sizzles and floats. Do not let the oil get too hot or the center of the hushpuppies will not cook thoroughly.

In a large mixing bowl, combine cornmeal, flour, egg, salt, baking soda, milk, and water. Mix until batter is smooth and free of any lumps. Batter should be stiff (if batter is too dry, add milk; if batter is too thin, add cornmeal).

Using two spoons, push a small amount of batter into hot oil (370° to 380° F). After about 10 seconds, hushpuppies will float to the top and begin to brown. Fry for approximately 5 minutes or until golden brown, turning to brown all sides. Remove from oil and place hushpuppies on paper towels; continue cooking the remaining batter (fry in small batches, adding 4 to 6 hushpuppies to the oil at a time). NOTE: They can be held in a 200° F oven until serving time (approximately 30 minutes). Serve hot.

Makes 2 dozen hushpuppies.
